Eating well on busy days...or...I have 5 kids and I don't eat out.

I don't eat out.  I have 5 kids and I still don't eat out.  This really wasn't a choice I made--my lifestyle was handed to me in the form of severe food allergies.  I figured out how to get real food on the table that everyone could eat, without making 4 different dishes. 

I don't think it matters how I got here, only that I'm here and can share that method with you.  AND YOU CAN DO IT!

It drives me crazy to hear people say, "I don't have time to cook that way."    They work 40 hours a week and have to get their kids to practice, or ballet, or gymnastics, or wherever and there is just no time to cook on those nights.  Click below to watch me prep a meal in 5 minutes.  


You can do this!!!  I PROMISE!!!

I have some questions for you to think about:

·        What is your crockpot doing when you are eating dinner on those nights you manage to sit down as a family?  

·        What if you made two meals at once?

·        If you double a meal, can you freeze it?

Ah!  See, now you’re thinking!!!   

You just need to get started!!  So, right now…NOW…go to your freezer and get out some meat.  Any kind, it doesn’t matter… I’ll wait……

Got it?  Let it thaw on the counter or fridge and in the morning, you are going to man handle that hunk and shove it in the crock pot.  You don’t need to spice it, just get it COOKED.  You’ll add that stuff later!

Tomorrow, when it’s done, add fixings to make it a burrito, or make BBQ sandwiches, or put it over lettuce for a dinner salad, or turn it into meat and dumplings.  The possibilities are endless!

Check out this video (click the pic!) in which I take 5 minutes to get meat in a crock pot and chop some vegetables.  If I wanted to add veggies to the crock pot, I would do that the next morning or later the same evening, after the meat was thawed and on it’s way to done.  I prefer to make meat without spices so that I can spice it as I use it!!
